This course focuses on three chronic health conditions that are prevalent today: high blood pressure, high cholesterol, and type II diabetes. Participants will learn about the biological basis of these diseases and how they can affect overall health. Practical tips for choosing and preparing healthy foods to prevent these conditions will also be discussed.
Karin Heckman is a registered dietitian and immunologist. She teaches in the Biology Department at St. Lawrence University. Karin is interested in how the immune system can be manipulated to treat autoimmune disease and cancer, and currently she conducts studies examining how synthetic antioxidants can be used therapeutically in the autoimmune disease multiple sclerosis.
